A thought-provoking Pinot Noir from ‘Les Santenots’ that elegantly moves between high-tone red fruit, fragrant spice and savoury earthiness as it enters its sixth year.
The fruit is hand-picked and triaged at the sorting table, then de-stemmed and transferred to open fermenters. Fermentation occurs naturally with indigenous yeasts to maintain the typicity of the terroir and of the vintage. Vincent carries out regular manual plunging. The wine is then pressed and transferred to oak barrels (30% new), where the wine matures for 15-18 months.
The nose offers aromas of red cherries and plums interwoven with notes of violet florals and hints of mushroom and raspberry leaves. Sour cherry fruit and earthy spice are balanced with supple, fine-grained tannins and bright acidity, that lead on to a persistent, savoury finish. Whole and harmonious, not a note is out of place in this beautifully Pinot Noir that is beginning to exhibit moreish signs of bottle age.
