Tradition 1er Cru Brut NV

Brochet-Dolet Brut Tradition NV is dominated by Pinot Noir with 40% Meunier and 10% Chardonnay. The final cuvée contains 30% reserve wine ensuring consistency in style and quality. The wine is aged for at least 3 years on lees and has a dosage of 10g/l.  

The wine is pale gold in the glass with a fine, lively bead. The nose is initially savoury, with toasty notes of biscuit, buttery pastry, and an underlying earthy character. As the wine opens, the bouquet develops aromas of orchard fruit, strawberries, lemon and apple blossom. The palate is vibrant with lively acidity and a fine, refreshing mousse. Red apples, strawberries and white peach complement richer flavours of brioche, oatcakes, and marzipan. The finish is long, with lingering nuttiness and a refreshing saline edge. 

The Brut NV has great concentration and depth of favour. While robust, its bright acidity and energetic bubble balance the rich autolytic and fruit characters. Stunning as an aperitif but also a great food wine; its breadth of flavour lends itself well to richer dishes. We love it with roast chicken and mushroom risotto, but it’s also ideal for finger food, even aged Comte.
